skewers & Greek salad:

INGREDIENTS FOR 2 :

- * 400gr pork, low rib without
bone cut into cubes (2cmx2cm)
- * 2 tablespoons vinegar (apple, white wine...
whatever you fancy)
- * 2 tablespoons olive oil (or peanut oil)
- * black pepper and salt
- * freshly chopped oregano
- * teaspoon of paprika powder
- * half teaspoon cumin
- * 200gr feta cheese
- * 8 pitted black olives
- * 1 red onion
- * 1/2 half cucumber
- * 1 small green pepper
- * 1 large tomato
- * 3 tablespoons vinegar (apple, white wine...
honey...whatever you fancy)
- * 3 large potatoes (waxy version)
- * 2 tablespoons peanut oil
- Cut the meat into small cubes (2cmx2cm)
and add those to a bowl.
- Add 2 tablespoons of vinegar and 2 spoons
olive oil (normal or use peanut oil), season with pepper
and salt, the cumin and the paprika powder.
- Mix all together.
- Add about 5 pieces of the meat to each
satay stick and place them aside.
- Sprinkle over some freshly chopped oregano
and set aside in the fridge for about 2 hours.
- Boil the potatoes (no need to peel them)
with some salt untill tender (time depends on how big your
potatoes are).
- Set aside to cool down and when cold enough
peel the skin off.
- Cut into thick slices and set aside.
- FOR THE SALAD:
- Peel one tomato (it tastes better without
the peel).

- In boiling water add the tomato, remove
from water and shock under cold running water to stop the
cooking process.
- Cut the tomato in cubes and add those to
a large bowl (no need to remove the seeds).
- Peel the cucumber and cut lenghtwise in
half and cut into small slices, add those with the tomatoes.
- Peel the red onion, cut in half and finely
chop it, add to the bowl.
- Peel the green pepper, remove the seeds
and cut in half, slice into small pieces, remove the pit
from the olives and cut into half and add everything to
the salad.
- Season with black peper and add 3 tablespoons
of vinegar.
- Mix everything well together and set aside.
- Cut the feta into cubes, add on top of
the salad and sprinkle over some extra virgin olive oil,
season with black pepper.
- Sprinkle some freshly chopped oregano
on top.
- Do the next two thing at once:
- In a frying pan add the peanut oil and
bake the potatoes 3 minutes on each side or untill golden.
- Season the potatoes with some freshly ground
sea salt.
- Heat the grill pan a few minutes and bake
the skewers on eacht side for about 3 to 4 minutes.
- Serve with the potatoes and the
salad.
TOOLS NEEDED:
- Grill pan
- Satay sticks (aprox 15cm)
- Frying pan
TIPS & TRICKS:
- Use pork, low rib without bone for a tasty
and tender result.
- Don't overcook the meat, you want it tender
and juicy.
- When making a salad use extra virgine olive
oil (never fry with extra virgin oil because then
the characteristic taste will be lost)
